Summer course recipes – dips

Recipes for quick and easy dips that will charm your guests. Dips are an elegant soulution for any party table or refreshment for unexpected guests. During our summer course for adults  it was a treat during the well-deserved breaks. You can also check out the photos and recipes for the sweet desserts served at the course.

DIP HERBAGGIO

Quark
1 tbs butter spread (pomazánkové máslo bez příchutě)
Honey mustard (the better quality the better result)
Mixture of herbs finely chopped: Italian flat-leafed parsley, thyme, oregano, chives but you can experiement with other herbs too
Salt
Pepper (I use a mixture of black and red)

 

GUACAMOLE

Avocado – it must be ripe – pleasantly soft to touch (not too soft and not hard)
Lime
Spring onion
Tomato
Parsley or cilantro
Salt and pepper

 

1.Mash the avocado with a fork.
2. Sprinkle with lime juice
3. Chop tomato and spring onion and mix in.
4. Season with salt and pepper.
5. Add the parsley.

 

AYVAR DIP

Quark or sour cream
1 tbs butter spread (optional)
Ayvar or spread made from roasted veggies

 

 

 

ITALIAN DIP

Quark and sour cream
1 tbs butter spread (optional)
Herbs – thyme, oregano, basil
A dried tomato or two
Black olives
Salt and pepper
Garlic (optional)

 

GARLIC DIP

Quark and sour cream
Grated blue cheese
Garlic
Herbs : parsley, chives
Salt and pepper

 

ROASTED VEGGIES DIP

Red pepper
Whole onion – not peeled
Garlic cloves – not peeled
Optional : zucchini, egg plant
Herbs: thyme, oragano, calamint and similar

 

  1. Line a tray with a baking paper.
  2. Put the vegetables – whole and unpeeled – on the tray and sprinkle with olive oil. (If the zucchini or eggplant are huge, cut them in half or so.)
  3. Bake at 200 – 220C until brown patches start appearing and the veggies are soft.
  4. Peel the onion.
  5. Squeeze the garlic out of its peel.
  6. Put the onion and garlic into a food processor and add other veggies
  7. Add herbs, salt and pepper
  8. Blend

 

ROASTED EGGPLANT DIP

Roast an eggplant, onion and clove of garlic (and a red pepper – optional)

Follow the procedure above.
